..ok maybe not space and time, but definitely food! And what better way to welcome you than with a fantastic lemon blueberry bread recipe, perfect for summer!
I made this last Thursday in preparation for the 4th of July weekend. I was gearing up to go camping with my mom, dad, boyfriend and... my parents cats. No, I'm not joking, we brought the cats along.

Anyways, my parents always complain that I bake all these delicious things, and they never get to try them. Not like I'm doing it on purpose, they live an hour away and I usually bake for my coworkers. None-the-less, I wanted to make my parents eat their words, literally... and deliciously.
Blueberry Lemon Bread
Ingredients
-2 tbsp canola oil
-2 tbsp of freshly squeezed lemon juice (1 lemon)
-1/3 cup of egg whites (2 eggs)
-1 and 1/2 cup whole wheat flour
-2 tsp baking powder
-3/4 cup agave syrup
-1 tsp salt
-zest from one lemon
-1 cup fresh or frozen blueberries
-1/2 cup skim milk
Make it!
-Preheat oven to 350 degrees. Grease bread pan (I use organic cooking spray).
-Combine oil, lemon juice, eggs, milk, and agave syrup in a small bowl.
-In another bowl, combine the flour, baking powder, and salt.
-Add the wet mixture to the dry mixture and combine until just moist. Don't mix it too much, or else the batter will get too tough.

-Fold in blueberries and lemon zest. *To fold, carefully incorporate the dough over the blueberries. Do not mix vigorously, as this will break the blueberries and turn the dough blue*

- Pour batter into greased bread pan. Bake for an hour or until toothpick comes out clean when inserted into bread.
